The XI International Excelencias Gourmet Gastronomic Seminar Kicks Off in Havana

The XI International Excelencias Gourmet Gastronomic Seminar opened its doors in Havana on September 25, bringing together over 30 international experts in the culinary field.

This event, the first in Cuba to focus on halal cuisine, is dedicated to exploring the "Influence of Arab gastronomy on Hispanic American cuisine."

The inauguration took place in the Arcos de Cristal Hall at the Tropicana Cabaret, where José Carlos de Santiago, president of the Excelencias Group, welcomed the participants. He highlighted the importance of sharing knowledge about Ibero-American gastronomy and extended special thanks to renowned Dominican chef María Marte, who held two Michelin stars in Madrid and will be presenting the Master Class "Flavors of the East: The Arab Influence on Dominican Cuisine."

The seminar includes key presentations such as "Halal Certifications Are Becoming Increasingly Important in the Horeca Sector" by Paola Zahra Álvarez of the Halal Institute of Spain, and the show cooking session “Shared Roots: The Link Between Arab and Mediterranean Gastronomy,” led by Honorato Espinar, executive chef at Iberostar. Additionally, a workshop on the influence of Arab cuisine on Hispanic American gastronomy will be moderated by Odalys Hernández, president of the Cuban Chair of Gastronomy and Tourism.

This event, endorsed by the Ibero-American Academy of Gastronomy and the Ministry of Tourism, will train attendees on Halal certifications, culminating in a participation certificate awarded by Excelencias, Formatur, and the Halal Institute of Spain.
